Sky River Casino launches rotating international dining concept
California property debuts food truck-style restaurant with menu that changes every two months

Sky River Casino in Elk Grove, California, opened Fork on the Road on October 7. The venue sits inside The Market at Sky River, which houses 18 different restaurants, bars and lounges across the property.

Executive Chef Peter DiCorti leads the culinary team behind the concept. He oversees all food and beverage operations at the casino.

Michael J. Facenda serves as the casino’s president. He announced the opening alongside the property’s recent gaming floor additions.

Why Sky River Created This Restaurant

The concept addresses demand for variety without requiring multiple restaurant spaces. Instead of building separate venues for different cuisines, one location rotates its entire menu every 60 days.

This approach lets the casino test different food styles. It also keeps regular visitors coming back to try new offerings.

The food truck theme creates a casual atmosphere that contrasts with traditional casino dining. Themed décor changes with each menu rotation.

Facenda called Sky River “a premier destination, providing an international culinary experience for our guests.” He emphasised the immersive elements beyond just food.

What Fork on the Road Offers

The restaurant launched with Greek cuisine as its first menu. Items include lamb gyro, chicken souvlaki and spanakopita.

Each 60-day period features a different country’s food. The menu completely changes when the rotation happens, not just adding items to existing offerings.

The space uses food truck-inspired design elements. These visual components shift with each new cuisine to match the menu’s theme.

And the concept doesn’t just serve food. The casino built what it calls an “immersive and engaging” dining experience with elements that complement each menu.

How This Fits Sky River’s Strategy

Fork on the Road represents the latest addition to Sky River’s expanded entertainment options. The property has been actively adding new attractions throughout 2025.

In September, Sky River became the first Northern California casino to install Ainsworth Game Technology’s Neon’s Bonus Blast slot game. Before that, it unveiled Aristocrat Gaming’s Chief Inferno slot machine.

Both gaming launches included free pull events and drawings for Sky River Rewards members. This pattern shows the property using special promotions to drive traffic to new offerings.

The dining concept follows this same approach. By rotating cuisines regularly, Sky River creates reasons for repeat visits. Guests can’t experience everything in one trip.

Facenda invited “adults who are hungry for new experiences and elevated foods from around the world” to visit the property. The statement positions Sky River as an evolving destination rather than a static venue.
